I am finally settled in Vancouver! My new room is all set
up, friends are being made, and good food is being cooked. I am back into the
swing of short-but-sweet cooking for school meals, and this curried quinoa
certainly takes the cake! It is super delicious, and can be made with whatever
veggies happen to be in your fridge!
1 cup quinoa
1 tbsp curry powder
1 small zucchini, quartered and sliced
½ onion, diced
1 red pepper, chopped
1 handful mushrooms, sliced
2 cloves garlic, minced
2 cloves garlic, minced
Olive oil
¼ cup feta cheese, crumbled
Cook quinoa according to package directions. Saute
vegetables and garlic in olive oil until tender. Add curry powder and cook for an
additional 2 minutes. Add cooked quiona, remove from heat, and mix thoroughly.
Sprinkle with feta cheese. Enjoy!
